Bouchon Pais Salvaje White is made from wild Pais vines grown naturally in the forest and harvested on tall ladders. Wild fermented then aged in clay amphora. Finally, the wine is neither filtrated nor clarified. Orchard fruits, lovely texture with a hint of pepper and a long complex finish.
It all began in the 19th century when a young viticulturist from France named Emile Bouchon arrived in Chile. Many years later, now deeply rooted in the Maule Valley, Julio Bouchon and his children carry on the family tradition of creating distinctive, terroir-driven wines.
Four generations of the Bouchon family have been creating wines in the Maule Valley.
They produce the notorious País Salvaje (wild País) which grown in a forest and requires hand harvesting on ladders some of which are 5 metres tall.
